Ceci and a Loaf


There is something about the combo of dry sherry, thyme and sharp cheese that just makes me happy. Today is meatless Monday and the eternal question is……what’s for dinner?

I happened across this Ceci and Quinoa soup a few weeks ago on the Cooking Channel and this is the second time I’ve made it….. I don’t re-run recipes often so this one must be worth keeping.


I made this with the chicken broth last time and it was delicious. Tonight I went meatless using vegetable stock instead and the result was equally good. (The basic stock recipe from How to Cook Everything except I revised a bit to make it in the slow cooker. I have a nice little stack of these in the freezer.)

Easy to make and paired with a nice grainy loaf, I think I will be making this again soon!
